Sunday pancakes.

Found this at Vons. It's vegan and whole grain, just what I needed. The mix requires milk and an egg. I subbed cashew milk and chickpea water (3 TB for 1 egg).

Came out fluffy and tender!

Homemade date syrup. 9 dates soaked in 1 1/4 cup boiling water for 1 hour then blended. Then simmered on stovetop until dark caramelly brown!


Also poured some maple syrup because I love maple flavor.

Vacation Eats!

Mac's Fish and Chip Shop in Santa Barbara. Authentic British food. I had chips and baked beans. Delicious!

I had the Local Favorite: avocado, onion, lettuce and tomato. Instead of mayo I got the tahini dressing on the side.

Patxi's Pizza in Santa Barbara. Vegan pizza with Daiya cheese!

Lunch special is $10 and comes with a personal size pizza and salad.

Lilac Patisserie in Santa Barbara. All gluten free with some vegan options. Like the red velvet cupcake. Mmmm!

My husband ordered a non vegan cappuccino and a lemon meringue tart. How pretty!


I enjoyed the heck out of this!

I also got carrot cupcake to go!

Last night in SB at Eladio's. Pizza with no cheese, red sauce, mushrooms, arugula and balsamic drizzle.

Yard House in downtown LA. The Gardein chicken and Avo sandwich, hold the mayo and cheese.

Illy coffee at the JW Marriott in downtown LA. I got a decaf soy latte and husband got a single shot espresso. I LOVE illy!!!

Cheater Lentil & Sausage Stew.


I was craving something warm and comforting today. I made the stew by sautéing onions, celery and carrots then added to it, 2 sliced Field Roast sausages and one small carton of store bought lentil soup (O Organics). I seasoned with Hp sauce, soy sauce and black pepper. I let it simmer until vegetables were cooked. Served with yummy mash.

They are fantastic! The crunch is amazing! I am so happy munching on these. Trying to stay away from white crackers and white bread because of blood sugar issues. 


Served with creamy hummus and tomato olive roasted pepper bruschetta.

The Happy Pear's healthy Snickers. All natural ingredients. I used peanut instead of almond butter so they taste like pb cups!


Bottom layer: almond flour, pb, agave. Top layer: dates, pb, nuts. All covered in dark chocolate!

Perfect served with Ketchup/Vegenaise sauce.


For dessert, coconut stuffed chocolate covered dates!

Lyfe Kitchen, big salad and gluten free pancakes.

Ginger Pomegranate lemonade, cucumber mint juice. Super refreshing!

Vegan Caesar. (Husband had mahi fish tacos, not vegan)

Today I made a big salad with grilled veg and cashew ranch.

Made gluten free pancakes from Averie cooks website. They are made with oats and coconut flour. Came out pretty good!
